Scalloped Potatoes
Difficulty Level: Medium
With the chicken, you could serve scalloped potatoes and steamed asparagus. For the potatoes...
Equipment: Cutting knife, cutting board, measuring spoons, measuring cups, 10-inch baking dish, saucepan.
Ingredients:
3 cups peeled, thinly sliced potatoes
1 teaspoon salt
2 tablespoons flour
5 tablespoons butter
1/4 cup chopped onion
3 slices chopped crisp bacon
1-1/4 cups milk
1/4 teaspoon paprika
1. Heat oven to 350 degrees F.
2. Cook sliced potatoes with the salt in boilign water for 8 minutes and then drain well. Grease a 10-inch baking dish and place potatoes in it in 3 layers, sprinkling each layer with flour and dotting with butter. On each layer, sprinkle with some of the onions and the bacon.
3. Heat the milk until warm and season with the paprika. Pour over the potatoes and bake for about 35 minutes, testing for tenderness with a fork. (You can cook the potatoes in the same oven as the chicken.)
