Peppered Leopard

Steamed Asparagus

Difficulty Level: Easy

Asparagus steams quickly and keeps its bright green color. Steaming is one of the best preparations for vegetables. It enhances the natural fresh flavors and is also a very healthy way to cook, since it doesn't require the addition of any butter, oil or salt. Almost any pan with a lid can be turned into a steamer. All that is necessary is an inexpensive collapsible steamer basket.

Equipment: Cutting knife, cutting board, measuring cups, pan with lid, collapsible steamer basket.

Ingredients:

1 pound asparagus, stems trimmed
1 cup water

Place water in steamer (just enough, so the bottom of the steamer basket will not touch the water), and arrange asparagus spears in the steamer basket. Place the basket in the pan and cover. When water comes to a rapid boil, add the asparagus and cook to desired tenderness. (Most average thickness asparagus will take 7 minutes, but thicker stalks take more time and pencil thin ones take only a few minutes.)

Add salt and pepper and serve immediately. You may add a little butter if you wish.
