Peppered Leopard  
 

Scrambled Eggs

 

Difficulty Level: Medium Easy

Equipment: Whisk, mixing bowl, skillet (nonstick if possible), measuring spoons, wooden cooking spoon.

 

Ingredients:

4 eggs (at room temperature)
2 tablespoons milk
Dash of salt and (of course, my favorite) pepper!
1 tablespoon butter

 

Add Milk  
Break eggs into bowl. Add milk, salt and a dash of pepper. Beat with whisk just a little bit for a "gold and white" egg dish, or whisk well for an "all yellow" egg dish.

 

Add Eggs  
Melt 1 tablespoon butter in a moderately hot skillet. Pour in the whisked egg mixture and reduce heat to low. Cook slowly, whisking gently as mixture sets at bottom and sides of pan (for nonstick pans use a wooden spoon so you don't scratch the surface). Avoid constant stirring. When cooked through but still moist (5 to 8 minutes), serve at once.
