Hummus
A Cooking with Kids Original Recipe (No-flame, No-fire)

Hummus, one of the most famous and popular dishes of the Middle East, combines Tahini Sauce with mashed chickpeas (also known as garbanzo beans). Serve hummus (HUM-muhs) on pita bread or celery sticks, or as a topping on the Grilled Meatless Mushroom Burgers.
Ingredients and Steps
- 1 15-ounce can chickpeas, rinsed and drained, or 1-1/2 cups fresh cooked chickpeas
- 1/2 cup Tahini Sauce
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- Olive oil and paprika for garnish (optional)
- Place all ingredients except the garnish in a mixing bowl. Mash to a chunky paste using a potato masher or fork. If desired, drizzle a spoonful of olive oil on top and dust with paprika before serving.
Serve Yummy Hummies—hummus on raw vegetables or pita bread—as a nutritious after-school snack. Hummus also travels well in a thermal container with celery, cucumber, and carrot sticks, as a tasty alternative to lunchtime sandwiches.
