Peppered Leopard  
 

Summer Sandwiches

 

Makes 6 small or 3 large sandwiches

 

Difficulty Level: Easy/Medium

Equipment: Small bowl, measuring spoons, spoon or fork for mixing, serrated knife.

This recipe calls for alfalfa sprouts, which can be purchased in most grocery produce departments. However, you can easily grow your own alfalfa sprouts: it's much cheaper, and it's fun to watch the growing process.

 

Ingredients:

1 medium-sized ripe avocado
1 tablespoon lemon juice
1 medium tomato, coarsely chopped
2 green onions, chopped
1 to 2 tablespoons olive oil
Salt and pepper
3 Pita bread pockets
3 slices bacon, cooked, drained, and crumbled
3 tablespoons alfalfa sprouts

 

Peel and dice the avocado, then sprinkle with lemon juice. Combine avocado with tomato, green onions and olive oil; toss lightly and season to taste with salt and pepper.

Toast bread 3 to 5 minutes in a 400 degree oven, until crisp and hot. Cut bread in half so that pocket forms. Add the bacon and alfalfa sprouts to the vegetable filling; spoon into the bread pockets and serve at once.
