Peppered Leopard  
 

"Himmel und Erde"

Serves 6

 

Difficulty Level: Advanced

"Himmel und Erde" is a well-known German dish, which translates as "heaven and earth."

Equipment: Apple peeler, knife, saucepan, measuring spoons, measuring cups, potato masher, grater, skillet, slotted spoon, paper towels.

 

Ingredients:

2 pounds tart apples
1 tablespoon sugar
2 teaspoons freshly grated lemon zest
4 to 6 cups buttered mashed potatoes
1/2 cups chicken broth
4 thick slices bacon
2 large onions, thinly sliced

 

1. Peel, core, and quarter apples. Place in saucepan and cook over low heat with sugar and lemon zest until soft.

2. Mash the apples and combine with buttered mashed potatoes and the chicken broth.

3. Fry 4 slices thick bacon in a skillet until crisp. Remove from pan with slotted spoon and drain on paper towel. Crumble the bacon.

4. Sauté onions in bacon drippings until translucent. Stir onion and bacon into the potato-apple mixture.
